1 Large head of cauliflower
6 - 8 Strips bacon cooked and crumbled (oven at 400 for 20 min)
6 T chopped chives
1/2 C Mayo
1/2 C Sour Cream
2 C Colby Jack cheese
8 oz sliced mushrooms

Directions:
Directions:
Preheat oven to 425º. In a large pot boil water and cook cauliflower for 8 - 10 min, drain and let cool. In a large bowl combine the sour cream, mayo 1/2 of crumbled bacon, 3 T chives, 1 C of cheese, mushrooms and cauliflower and mix well. Place in baking dish and cover with remaining 1 cup of cheese and bacon bits. Bake for 15 - 20 minutes until cheese is melted. Top with remaining 3 T chives.
