1 bunch beets, peeled and cubed
1 bunch carrots, scrubbed and sliced diagonally 1/2 in.
1/2 large sweet onion, sliced in strips
1/3 cup olive oil

Directions:
Directions:
Place all the ingredients in a large baking dish. Cover and bake at 350º for an hour. Stir once half way through the baking time.
Serve as a side dish with dinner. You can't believe how delicious this combo turns out!

It looks different, but DARE your kids to taste it! It is wonderful; but the best is yet to come. Save half of the roasted beet ratatouille in the refrigerator for an amazing salad. See "Roasted Beet Salad with Orange Glaze".
