1 cup of each of the following:
hemp hearts, hulled
flax seed, ground
chia
sesame seeds
sunflower seeds, ground
pumpkin seeds, ground
walnuts, ground
almonds, ground
hazelnuts, ground
peanuts, ground
pistachio, ground
cashew, ground
dried cranberries, chopped
raisins, chopped
dried apricots, chopped

10-20 dates, pitted and chopped
1/2 c honey
1 c chocolate chips
1 tsp vanilla

Directions:
Directions:
Pit and chop dates. Add just enough boiling water to cover dates in a bowl. Let soak while grinding nuts. After soaking, blend dates in food processor or blender until smooth.

Grind all nuts and seeds, mix together in large bowl.

In a saucepan on medium low heat, melt together honey and chocolate chips just until blended. Remove from heat and add blended dates and vanilla. Mix well.

Combine chocolate date mixture with ground nuts. Mix well until uniform.Spoon enough mixture into hand to form one inch balls. Place on cookie sheet lined with parchment paper to cool. Use a little bit of oil on hand to prevent balls from sticking. The blended nuts will be quite oily and should press into balls nicely. If too crumbly add a bit more date mixture, melted chocolate or honey. If too sticky add more ground nuts or seeds.

Place in fridge until cool. Transfer to tupperware or bags and keep in freezer until ready to eat.

Great for an on the go snack, hiking or biking. Makes a large batch, around 5-10 dozen depending on how many ingredients are used and the quantity of each. I encourage a little bit of experimentation with this recipe, as I always put only some or all of the ingredients in whatever quantity I have lying around or to desired preference. All nuts should be ground fine, but not into a butter (although if this happens they still work fine).
