Dough: 1 3/4 c. warm water, 1/4 c. olive oil, 1 t. salt, 1 T. sugar, 1 1/2 T. yeast, approximately 5 1/2 c. flour

Garlic Coating: 1/8 c. olive oil, 2 T. butter, 4 finely crushed garlic cloves, 1/4 c. finely chopped fresh parsley

Make dough. Cover and let rise 1 to 3 hours, until doubled in size. Chill the dough for a bit after it has risen, if you want to make it ahead, you can chill it up to 1 to 2 days in the fridge. Setup your knot making station. Line several sheet pans with parchment paper. Oil your counter or a cutting board with lots of oil. Oil your hands, Divide the dough in half, slap it onto the oiled surface several times to flatten. Roll into a rectangle about 5x16-1/2 inch thick. Cut into 1/2 inch by 5 inch stripes. Roll strip back and forth to create a rope. Tie into knot (over, under and through) and place on lined baking sheet about 2 inches apart. Flour is your friend to help keep the dough from sticking to itself while forming the knots. When done, cover all knots with a tea towel and let rise until double in size. Preheat oven to 400 º and bake until golden about 15 to 20 minutes. While knots are baking, make garlic coating. Gently warm olive oil, butter and garlic in a small pan. Add chopped parsley and set aside. While knots are still warm toss with garlic coating and season with salt. Serve warm.
