Ingredients: 1 Stick Butter 1 Large Finely Chopped Onion 1/2 Finely Chopped Bell Pepper 1 Can Ro-Tel Diced Tomatoes with Chilies 1/4 Cup Ketchup To Taste, Louisiana Style Hot Sauce 1 Can Chopped Mushrooms As Available, Diced Boiled Potatoes (From Crawfish Boil) (Optional) As Available, Cubed Sausage (From Crawfish Boil) (Optional) 1 Pound Peeled Crawfish Tails 1/4 Cup Chopped Green Onions 1 Tablespoon Chopped Fresh Parsley To Taste, Salt To Taste, Red Pepper To Taste, Black Pepper 4 Eggs 4 Tablespoons Milk 2 Tablespoons Butter 1 Cup Shredded Sharp Cheddar Cheese

Directions:Melt the BUTTER in a large skillet. Add in the ONION, BELL PEPPER and GARLIC and sauté for 5 minutes.
Add in the RO-TEL, KETCHUP, TABASCO, MUSHROOMS and any Optional Items, such as POTATOES, CORN, SAUSAGE, etc.
Stir this and simmer for about 20 minutes. Stir in the CRAWFISH, 1/2 of the GREEN ONIONS, PARSLEY, SALT, RED PEPPER and BLACK PEPPER and simmer for 5 minutes, stirring often. Remove from the heat and set aside.
In a bowl, beat the EGGS, MILK and remaining GREEN ONIONS. Season with SALT and PEPPER. Melt 2 Tablespoons of BUTTER in a large OMELET Skillet over a medium heat. Pour the EGG Mixture into the skillet and swirl the skillet around to blend out and coat evenly. Being careful not to burn the underside of the OMELET, continue cooking until the OMELET is done.
Spoon in the CRAWFISH MIXTURE onto one half of the OMELET. Top this with the Shredded CHEESE. Fold the OMELET over to cover the filled half. Serve while hot. |

But to Louisiana Natives and those who have lived in Louisiana, Crawfish are not only a food to be savored and devoured, they are a way of life. This is Mom's recipe for kicking your morning Omelet up a notch. Yes, in Louisiana, we enjoy Crawfish for Breakfast too. This is a Cajun-Style Omelet. Ideally you make this following a Crawfish Boil, and then you add in some of the Potatoes, Corn Mushrooms and Sausage as well.
