1 Pound Alligator Sausage
1 Pound Hillshire Farms Smoked Beef Sausage
1/2 Cup Chopped Onion
1/2 Cup Finely Chopped Celery
1/2 Cup Finely Chopped Bell Pepper
1 Pound Cooked and Peeled Crawfish Tails
2 Cups Uncooked Long-Grain Rice
1 10-Ounce Can Ro-Tel Diced Tomatoes with Chilies
1 Can Onion Soup
1 Can Beef Consommé or Stock
1 Bunch Chopped Green Onions
1 Pound Sliced Fresh Mushrooms
3 Cloves Minced Garlic
2 Bay Leaves
1 Tablespoon Cajun or Creole Seasoning
1 Tablespoon Ground Black Pepper
1/4 Pound Butter or Margarine

Directions:

Crumble the ALLIGATOR SAUSAGE and brown it in a skillet over a medium heat. Drain off the excess grease and put the browned SAUSAGE into a large covered Casserole Dish or Baking Pan.

Slice the BEEF SAUSAGE into Medallions and add to a skillet. Add the YELLOW ONION, CELERY and BELL PEPPER and heat over a medium heat, stirring frequently, until the VEGETABLES are tender and the SAUSAGE is somewhat browned, and then add this Mixture to the Casserole Dish with the ALLIGATOR SAUSAGE.

Add ALL of the remaining INGREDIENTS and stir to mix together well. Place the Cover on the Casserole Dish or Pan and bake in a preheated 350°F. oven for 35 minutes, then stir the Mixture well and continue to cook for an additional 30 minutes, or until the RICE is cooked and tender.

Remove from the oven and allow to cool, uncovered, for about 10 minutes before serving.

This is a typical South Louisiana recipe I have for combining Alligator Sausage and Crawfish Tails together in a wonderful spicy and flavorful Rice Casserole. You can easily adjust the heat up or down, according to your preference.
