2 1/4 Cups Flour
1/3 Teaspoon Baking Soda
2 Teaspoons Baking Powder
1 Teaspoon Salt
1/3 Cup Shortening
1 Cup Milk
As Needed, Melted Butter for Brushing

Directions:
Directions:
Mix the FLOUR, BAKING SODA, BAKING POWDER and SALT together in a large mixing bowl.

Now, Cut in the SHORTENING with a Pastry Blender or 2 knives, until the mixture looks like coarse Cornmeal.

Next, add the MILK and stir just enough to hold the DOUGH together. The DOUGH may seem kind of wet and very sticky.

Put the DOUGH onto a Floured surface and knead it lightly a few times, just enough to where it is not too sticky, and is workable.

Roll the DOUGH out to 1/3 to 1/2 inch thick, then cut out the BISCUITS with a large open-mouth jar, dipped in Flour before each cutting.

Place the BISCUITS separated on an un-greased cookie sheet. You can brush the tops with Melted BUTTER if you like.

Bake in a preheated 425°F oven for 12 to 15 minutes, or until browned as desired.

In the South there are all kinds of Biscuits for all sorts of occasions and situations. This is Mom's recipe for what is called a Cat Head Biscuit. - Cat Head is a Southern term for these Biscuits because they look as big as a Cats Head. - These are pretty basic in the South, and are usually the Biscuits most Southerners have with Sausage and Gravy.
