6 slices bacon
2 sweet or Vidalia onions, sliced thin
1 Tbsp. sugar
1 Tbsp. balsamic vinegar
few fresh thyme sprigs or 1/2 tsp. dried thyme
salt and pepper
1 1/2 container Philadelphia bacon flavored soft cream cheese
2 sheets puff pastry

Get frozen puff pastry sheets out to thaw.(will take 40 minutes) While pastry is thawing cook bacon. Cool and crumble. Remove from pan and use about 2 Tbsp. bacon grease to saute onions. Add thyme, salt and pepper. Cook onions about 15 minutes, or until onion is soft and caramel colored. Stir in sugar and balsamic vinegar. Preheat oven to 400º. Place both sheets of puff pastry on large baking sheet and pinch together seams. Spread cream cheese evenly onto pastry. Top with onions and bacon pieces. Bake 20-30 minutes until bubbly and brown.

*I have also made this in the summer substituting garden veggie cream cheese and zucchini. Don't cook the zucchini. Just take a vegetable peeler and make long ribbons. Just cover the cream cheese with the zucchini ribbons, fresh grated Parmesan, cracked black pepper and bake.
