1 Large Can Salmon, Drained
2 Cups Mashed Potatoes
1 1/2 Teaspoons Salt
1/4 Teaspoon Ground Black Pepper
1/4 Teaspoon Onion Powder
1/3 Cup Finely Chopped Green Onions
1/4 Teaspoon Worcestershire Sauce
2 Eggs, Slightly Beaten
1 Cup Sifted Bread Crumbs
As Needed, Cooking Oil For Deep Frying

Drain the SALMON and then place in a mixing bowl. Mash the SALMON with a fork to separate and flake the Meat.

Add in the POTATOES, SALT, PEPPER, ONION POWDER, GREEN ONIONS, WORCESTERSHIRE SAUCE and one of the EGGS.

Stir and mix this all together very well. The texture should be somewhat thick and firm. If not, add a little more POTATOES.

Now, have your BREAD CRUMBS in a shallow bowl, and the remaining Beaten EGG in another. Add enough OIL to a deep pot of fryer to be deep enough to Deep Fry the BALLS. Begin heating the OIL to about 365°F.

Shape the SALMON Mixture into BALLS and then roll the BALLS in the BREAD CRUMBS, then in the EGG, and then back into the BREAD CRUMBS.

Carefully drop the Coated BALLS into the Hot OIL and Deep Fry for about 4 or 5 minutes, or until golden brown. - Remove and drain on paper towels. - Repeat with any remaining BALLS. Serve while hot.

This is Mom's recipe for Fried Salmon Balls. She also sometimes calls these Salmon Floats, I guess because they float when they are cooking. - Of course, you can also bake these. - Anyway, these are a good appetizer food, but can also be made into an entree, and as usual, you can adjust the seasoning to your liking.
