1 lb very fresh, sushi grade tuna steak
1/4 cup good olive oil
1 lime zest grated
1/4 cup freshly squeezed lime juice
1 1/8 tsp wasabi powder
1 tbls soy sauce
1/4 tbls hot sauce
1 tbls kosher salt
1/3 tbls pepper
4 scallions mined white and green
1 tbls fresh mined jalapeņo (or jarred pickled)
1-2 ripe haas Avocados
1/2 tbls toasted sesame seeds, optional

Directions:

Cut the tuna into 1/4 inch dive and place in a nonmetallic bowl. In a separate bowl combine the olive oil, lime zest, lime juice, wasabi, soy, hot sauce, salt and pepper. Pour over the tuna, add the scallions and jalapeņo and mix well. Cut the avocado's into 1/4 inch dice (about same size at tune) and carefully mix into the tuna mixture. Mix in sesame seeds if desired. Let sit for at least one hour for flavors to meld.

Serve with sturdy crackers.
