Ingredients: 1 Pound Cubed Alligator Tail Meat To Taste, Salt To Taste, Ground Black Pepper To Taste, Ground Red Pepper 1 Tablespoon Louisiana Style Hot Sauce 1 Cup Vinegar 1 Tablespoon Lemon Juice 1 Cup Flour 3 Cups Cornmeal As Needed, Cooking Oil

Directions:Place the Cubed ALLIGATOR in a deep dish, then season well with SALT, PEPPER and RED PEPPER.
Now, add in the TABASCO SAUCE, VINEGAR and LEMON JUICE and place in the refrigerator overnight.
When you are ready to cook, mix the CORNMEAL and FLOUR together in a dish.
Remove the MEAT from the Marinade and dredge in the FLOUR Mixture to coat well.
Heat about 1 inch of COOKING OIL in a large heavy skillet over a medium high heat (375°F), and drop the Coated MEAT into the Hot OIL and fry until golden brown on all sides.
Drain on a paper towel and serve with sauce or condiments. |
