1 Pound Cubed Alligator Tail Meat
To Taste, Salt
To Taste, Ground Black Pepper
To Taste, Ground Red Pepper
1 Tablespoon Louisiana Style Hot Sauce
1 Cup Vinegar
1 Tablespoon Lemon Juice
1 Cup Flour
3 Cups Cornmeal
As Needed, Cooking Oil

Place the Cubed ALLIGATOR in a deep dish, then season well with SALT, PEPPER and RED PEPPER.

Now, add in the TABASCO SAUCE, VINEGAR and LEMON JUICE and place in the refrigerator overnight.

When you are ready to cook, mix the CORNMEAL and FLOUR together in a dish.

Remove the MEAT from the Marinade and dredge in the FLOUR Mixture to coat well.

Heat about 1 inch of COOKING OIL in a large heavy skillet over a medium high heat (375°F), and drop the Coated MEAT into the Hot OIL and fry until golden brown on all sides.

Drain on a paper towel and serve with sauce or condiments.

Crispy and spicy on the outside, tender and juicy on the inside, this Cajun Fried Alligator is a treat for all. - Growing up we always made good use of an abundance of Fish and Wild Game. Mom is a magician at coming up with various ways to prepare all the varieties of such. This recipe is pretty basic for Fried Alligator. It makes it very tender and flavorful. It can then be served with whatever you want. You can also easily adjust the seasonings and spices to your preference.
