1 lb. red or green jalapeņos
4 c. distilled white vinegar
2 T. kosher salt, to taste

While wearing disposable gloves, cut stem and tops off clean, washes chiles taste for heat; remove or keep the seeds and membranes ( which add heat), as necessary.

Place the chiles in a large nonreactive (non-aluminum or cast-iron) pot. Cover with vinegar; add salt. Simmer about 10 minutes.

With tongs, remove chiles to a blender. If seeds were included, strain vinegar cooking liquid and add seeds to blender, reserving 1 c. of liquid. Blend chiles, in batches if necessary.

Strain through a fine mesh colander or chinois, pressing to extract as much if the rime pulp as possible. skim the foam. Use the reserved vinegar to adjust thickness (the sauce should be thin and vinegary), add sugar and adjust salt to taste, if necessary.
