Murray's Potato Latkes Recipe

1 pound potatoes
1 onion
1 tsp salt
1/4 tsp pepper
1/3 cup flour
1 large egg
Canola oil for frying

Preheat oven to 250F

Peel potatoes. Shred on the large holes of a box grater.
Place shredded potato in a colander set over a bowl to drain. Let sit for a few minutes. Then using your hands, squeeze the potato until dry and transfer to a large bowl. Discard the potato liquid.

Add onion, salt, pepper, flour and egg to potato and toss together until well combined.

In large heavy skillet heat 2 TBS of oil over medium. Using a 1/4 cup measure place 3 to 4 mounds of potato mixture in the pan, flattening with a metal spatula to a 1/2 inch thickness. Cook until golden brown and cooked through, about 4 minutes per side, lowering the heat if over browning.
Repeat with remaining mixture, adding additional oil as needed.

Drain cooked latkes on paper towel. Once drained place on a rack set on a baking sheet and put in oven to keep warm.
