One medium sized pumpkin (peeled and cut into cubes)
2 cups bulgar wheat
1 medium sized onion shredded
1 tsp. allspice
1 tsp. salt
1/2 tsp. pepper
1/2 cup water
2 cups olive oil

Directions:
Directions:
Boil pumpkin until it softens. Drain and let cool. Once it cools, you will have to squeeze all the liquid out.

Put the bulgar wheat in a bowl and add the water. Let sit for a few minutes until the wheat soaks up the water.

Add the onion and spices to the bulgar wheat. Mix well.

Add the pumpkin filling to the bulgar wheat mixture. Mix well.

Form 2" balls and then flatten each one.

Heat olive oil in pan. Fry each piece until crispy and golden brown.

This makes great use of all of your pumpkins during the fall season. You can roast your pumpkin seeds and then use the pumpkin filling for this delicious appetizer.
