4 sliced bacon - cooked and crumbled
1 med onion chopped
2 ribs celery chopped
1 small bellpepper chopped
2 C raw rice
1 (1lb) can tomatoes drained and chopped
(save the juice)
1 8oz can tomato sauce
1 tsp sugar
1 tsp salt
black pepper
Tobasco to taste - should be spicy

Directions:

Fry bacon in pot until crisp, remove. Saute onions, celery and bell pepper in bacon grease until onions are translucent. Crumble bacon and return to pot.
Add rice, stir to coat with grease. Add tomatoes, Measure reserved tomato juice and tomato sauce, add water to make 2 1/2 c total liquid. Pour over rice and bring to boil, stirring occasionally. Immediately lower until barely simmering. cover pot and set timer for 20 minutes. After 20 minutes, remove from heat and let sit at least 20 minutes. Do not peek. After 20 minutes, fluff with fork and serve.
