3 lb. piece of ham
2 onions
2 carrots
4 allspice
6 peppercorns
2 celery stalks

Crust:
1 c fresh breadcrumbs
4 oz. soft brown sugar
2 tsp. mild mustard
a little fruit juice or cider for mixing

Directions:
Soak ham in salt water for 8 hours. Put in a pan with the carrot, onion, celery, peppercorns and allspice. Bring gently to a boil and simmer for 45 min. Meanwhile prepare the brick and make the mixture for the crust. Mix the breadcrumbs and mustard with enough fruit juice to make a paste. Peel the ham and spike the fat with about 12 cloves. Spread the breadcrumbs mixture over the ham and place in the brick. Roast for 1 1/2 hours at 500º. Quite a lot of fat comes out of the meat, so its best to pour it off before using the juice to serve with the meat. Add a little more fruit juice or cider to the juices in the brick. Fruit can be added to this; stewed, fresh or dried apricots, cranberries or apples.
