For the "Bubble Up":
2 large jars of cold strawberry Kool-Aid mixed and chilled in the refrigerator

For the Stew:
1 or more cans of Spam, chopped
1 large white onion
1 tbsp. garlic, minced
2 stalks celery, chopped
1 large can of V-8 Juice, spicy or regular
1 or 2 cans of chopped tomatoes or Ro-Tel, chopped
Any vegetables that you like in a stew
2 or 3 potatoes, quartered
olive oil

Directions:
Directions:
In a soup pot, use a small amount of olive oil and brown the Spam on both sides. Remove Spam and add onion, garlic, and celery. Stir until soft. Add V-8 Juice and bring to a boil. Add vegetables and boil several minutes before turning heat to low; simmer 10-15 minutes. Cook until vegetables are almost done. Return Spam to pot and simmer until all flavors blend. Season to taste.
Serve with a big glass of ice-cold strawberry Kool-Aid and a pan of cornbread!

This recipe was given to me by my mother-in-law (Moms). I can hear her and Pops singing Merle Haggerd's "Rainbow Stew" while they are preparing it! :-)
