Ingredients: 1/2 C canola oil 7 cups diced chicken breast 1 Tbsp chili powder 1 Tbsp salt 2 tsp black pepper 2 oz canola oil 2 oz butter 1 yellow onion, chopped 2 Tbsp chopped garlic 2 oz roasted poblano chili (or green chili) 1 oz green chili 3 oz flour 8 cups chicken stock 1/4 cup salsa verde 1 Tbsp chipotle tabasco 1 cup heavy cream 2 cans white beans, drained pico de gallo (garnish) rice (garnish) green onions (garnish) cilantro (garnish)

Directions:Heat canola oil in large saute pan. Combine spices and chicken in mixing bowl. Lightly brown chicken until about 3/4 done. Set chicken aside. Heat additional oil & butter in pan. Saute onions until translucent. Add the garlic, cook for about 30 seconds. Add poblanos and green chili. Add flour, stir to incorporate and cook 2 minutes. Add chicken stock a little at a time and slowly whip out lumps. Add the salsa verde & tabasco. Allow to come back Ta o simmer and add chicken back into pan. Simmer for 5 minutes, and add cream and beans. Serve with garnishes. |
