SALAD:
5/6 fistfuls baby spinach sliced into thin strips
1 can corn, drained
1 can black beans, drained & rinsed
1 small red pepper, diced
1 small avocado cut in small cubes
1 jalapeņo, diced
5 tbs. cilantro/basil, chopped
1/2 cup store bought crispy shallots or fried onions

LIME VINAIGRETTE DRESSING:
3 tbs. olive oil
1 tbs. fresh lime juice
1/4 tsp. Kosher salt
pinch of freshly ground pepper
pinch of sugar

Directions:
Directions:
Slowly whisk olive oil into lime juice and then add salt, pepper and sugar.

Toss all salad ingredients together with the Lime Vinaigrette.
