1 cup umm-eh - whole wheat
4 cups water
l cinnamon stick
1-2 dried figs
1 T. yansoon - anise seed

Directions:
Directions:
Simmer all ingredients for about ninety minutes or until the wheat is tender but the kernels are not open. Add water if needed.
To serve, put a little sugar, walnuts, or pomegranate seed in a cup and add umm-eh and broth.

It is the custom for a mother to send a bowl of this soup which has been decorated with Jordan Almonds to her neighbor to announce the arrival of her baby's first tooth. The neighbor returns the bowl with a pair of socks, an undershirt or other small article of clothing for baby.
Don't wait for your baby's first tooth to make it. The warmth and aroma of it ar a wonderful on a cold winter night.
When you go to a Lebanese grocery to buy the wheat. be sure to specify you want ummeh lil suleh - unskinned whole wheat for boiling. This is different form the umm-eh you'd buy for hareesee.
