Shrimp Gumbo Recipe

3 T flour
3 T oil
1/2 lb smoke sausage (such as Kielbasa) cut into 1/2 inch slices
2 C frozen okra (can use fresh okra)
1 large onion chopped
3 cloves garlic minced
1/4 tsp ground red pepper (cayenne)
1/4 tsp pepper
1 can (14.5 oz) can diced tomatoes (you can use two)
1 pkg frozen shelled deveined cooked shrimp (medium or large)
1 1/2 cups uncooked regular long grain white rice (calrose is the brand I use)
3 C water

In small saucepan combine flour and oil, mix well. Cook stirring constantly over medium high heat for 5 minutes or until mixture turns reddish brown forming a rue. Place rue in 3 1/2-4 quart crock pot. Stir in all remaining ingredients except shrimp, rice and water. Cover and cook on low for 7-9 hours. Before ready to serve, rinse shrimp and remove tails. Slice into large pieces and put into gumbo--cook at least another 20 minutes. Cook white rice according to instructions. Serve gumbo over rice. I rarely use okra in the recipe as PJ doesn't like okra. This is really filling and can be eaten over a course of a couple of days.
