celery
onions
carrots
garlic
salt & pepper
parsley
poultry seasoning

Dumplings:

2 cups flour
1 tsp. salt
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 cup buttermilk
1/2 cup broth

Directions:
Directions:
Boil chicken with onions, celery, carrots, garlic, salt, pepper, parsley and poultry seasoning. When cooked, cool, debone and chop, discarding skin and bones. Strain broth and return to Dutch oven. For dumplings, mix to consistency of biscuit dough, adding flour or liquid as necessary. Roll out about 1/2 inch thick. Cut into strips and drop into simmering broth. Simmer 20 minutes; add chicken and simmer 5-10 minutes more. Thicken with flour paste. Add salt and pepper as desired. Serve with cornbread and a salad.
