1 ice cream pail helping full of crab apples
5 tsp cream of tartar
5 qt boiling water
1 to 1 1/2 cups granulated sugar

Directions:
Directions:
Clean crab apples and quarter. Place in a clean crock, then add cream of tartar. Cover with boiling water, cover and let stand for 24 hours. Strain through fine strainer or jelly cloth. Add sugar to juice.
Pour mixture into large kettle and boil for 5 minutes. Cool. Pour into storage containers, leaving headspace, and freeze. Makes about 5 litres.
