2/3 c. butter
2 T. Maple syrup
3/4 c. brown sugar
3/4 c. coconut
1.5 c. rolled oats
3/4 c. flour
1.5 t. baking
1.5 t. ground ginger


Icing:

4 T. Butter
8 T. Icing sugar
4 t. Maple syrup
2 t. Ground ginger

Preheat oven to 350ºC

Melt butter, brown sugar and maple syrup in a saucepan. Remove from heat and stir in coconut, oats, flour, baking powder and ginger. Mix until combined.

Bake for 15 to 20 minutes. Mark into squares while stilt warm. Ice when cool.


Icing:

Melt all ingredients in a saucepan.
