SALMON CROQUETTES:
1 can Salmon/drained, 1 T. Baking Powder,
2 T. minced Onion, 1 Egg

Mix - shape into cones or patties. Roll in cracker crumbs. (Refrigerating for an hour will keep them together) Fry 3-4 minutes on each side. Optional: 1/2 stalk chopped celery, 1 T. olive oil & 1 T. snipped dill spice.

WHITE SAUCE: 1 T. Flour, 2 T. Butter, 1 C. Milk, Salt & Pepper to taste.
Whisk together over medium heat & boil. Pour over croquettes.
One of Bob's favorites! I serve with mac & cheese, peas & bread.

BAKED SALMON MARINADE:

1lb. Salmon, 1/4 C. Soy Sauce, 1/4 C. Olive Oil, 1 tsp. minced Garlic & 1 tsp. grated Ginger. Marinate salmon for 2 hours in refrigerator.

Bake in greased baking dish 10-15 min. at 400 degrees (on middle shelf) of oven. Pour remaining marinade over fish & serve.

BROILED SCALLOPS: 1 3/4 C. Oil, 1/4 C. Catsup, 1 sm minced clove Garlic, 1 tsp. Salt, 1 tsp. Paprika, 2 lbs. fresh Sea Scallops....Combine first 5 ingred. in a lg shallow dish; stir well. Add scallops & refrigerate 2 hours. Remove from marinade, broil 2 min. on each side-marinade.
