2 - 20 oz. can unsweetened pineapple chunks
1/4 cup and 2 Tbsp. white sugar
3/4 cup butter, melted
1/4 cup and 2 Tbsp. all purpose flour
10 oz. shredded Cheddar cheese
50 buttery round crackers, crumbled (Ritz crackers)

Directions:

Drain pineapple, reserving 3 Tbsp. juice
Combine pineapple, reserved juice, butter, flour, and cheese. Mix well. Spoon into buttered 1 1/2 quart baking dish. Top with cracker crumbs. Bake at 350º for 30 minutes.

This recipe came from a co-worker. I made it at Thanksgiving one year and some loved it and others did not. It is a nice change of pace from the typical side dishes.
