1 c. bread crumbs
4 whole chicken breast (split & skinned)
salt & pepper
1/4 tsp. dried tarragon
7 tbsp. butter, divided
1/4 c. minced onions
1/2 c. chicken broth
1/2 c. dry vermouth
1/2 lb. mushrooms (sliced, 2 1/2 c.)

Directions:
Directions:
Sprinkle chicken with salt and pepper & tarragon. Coat the pieces with bread crumbs. In a large skillet oven medium heat, brown the chicken in 4 tbsp. butter. Place the chicken in a single layer baking dish. Saute onions in butter remaining in skillet until tender. Add broth and Vermouth, bring to a boil. Pour around chicken and bake uncovered in preheated oven of 350º for 40 minutes. Meanwhile, saute mushrooms in the remaining 3 tbsp. butter, and add to chicken just before serving.
