Directions:
Rinse the dried green peas in a colander to remove any dirt/dust. Let
them soak in warm water while preparing the other ingredients.
Dice an onion and start to saute in a large pot with some olive oil
or vegetable oil. Slice bacon into small strips (1/2 inch wide) and
add to onions. Once bacon is well cooked add mushrooms if using.
Then add the drained peas to the pot along with 8-10
cups of water. Add desired spices. Bring to a boil and keep boiling until
the peas are tender, stirring regularly. Add water to get the
consistency you would like. Add as much honey as you would like
to sweeten up the dish (normally 1/4-1/2 cup). Serve warm with
chow chow on top if desired.
