1 bag of dried lentils (about 2 cups)
8-10 cups of water
1-2 cups of Thinly sliced carrots
1/2 Pound of bacon cut into small pieces
1 large onion diced
1 package of mushrooms (optional)
Olive Oil or Vegetable Oil
Basil
Oregano
Salt
Pepper
Mustard Seed (if available)
Honey
Chow Chow

Directions:
Directions:
Rinse the dried lentils in a colander to remove any dirt/dust. Let them soak in warm water while preparing the other ingredients. Dice an onion and start to saute in a large pot with some olive oil or vegetable oil. Slice bacon into small strips (1/2 inch wide) and add to onions. Once bacon is well cooked add mushrooms if using. Then add the drained lentils to the pot along with 8-10 cups of water. Add desired spices. Bring to a boil and keep boiling until lentils are tender, stirring regularly. Add water to get the consistency you would like. Add as much honey as you would like to sweeten up the dish (normally 1/4-1/2 cup). Serve warm with chow chow on top if desired.
