1 med. onion
2 tbsp. Butter
Crushed garlic
1 lb. of ground sausage
1 can sauerkraut
1 c. flour
1 egg
1/2 c. milk
2 tubes of Ritz Crackers
Oil for deep frying
Salt and pepper to taste

Directions:
Strain sauerkraut, save juice. Rinse and finely chop sauerkraut. Chop onion into fine pieces and sauté in butter & garlic. In a separate pan, brown sausage - use a spatula to break the sausage into very fine chunks. Strain sausage of all the grease and place on a paper towel to wick away any additional grease. (Grease will prevent the concoction from sticking together). Mix the sausage, butter-onion-garlic mix and a little bit of the saved sauerkraut juice, in a fry pan while heating until warm. In a large bowl mix warm sausage mixture with sauerkraut. Chill for at least 2 hours. Add 1/2 cup of four to the chilled mixture, roll into balls. Roll the balls in loose flour, an egg milk mixture and then finely crushed Ritz crackers. Deep fry in oil for 60 seconds. Place on paper towel to cool. Enjoy.
