25-30 large cucumbers
2-3 large onions
2 large bell peppers
1/2 c. salt
Ice water

Slice cucumbers and chop onions and peppers. Cover with ice water and salt. Soak 3 hours.

Mix and bring to a boil:
5 c. sugar
6 c. cider vinegar
2 c. water
3-4 T. mustard seeds*
1 tsp. turmeric
sprinkle of cloves

*I used pickling spice instead of spices above. Very good.

Drain cucumbers and add to liquid when boiling. Put in sterile jars and seal. Makes 6-8 quarts.

Started making these when we bought our first 2 acres and had a big garden. Papaw could grow anything - he had 2 green thumbs! The kids loved these even though Papaw was more partial to dill pickles. They were stored in the pantry outside where we kept all our canned goods. The kids would eat a whole jar and then hide it so I wouldn't know, Papaw, too. Little rascals!

This photo was taken when we went to see Grandpa and his new wife, Rose. They were married for many years until Grandpa died. We accepted her as part of the family, but everyone was still partial to Grandma Richter. There was just no one like her.
