2 cups - flour
1 TBSP - baking powder
2 tsp - sugar
1/4 tsp - salt
1/4 tsp - ground red pepper (I use chili powder)
3 TBSP - chilled butter (margarine), cut into small pieces
3/4 cup - shredded extra sharp cheddar cheese
3/4 cup - finely chopped ham (I use the flakes of ham in the small can)
3/4 cup - buttermilk (I use 1 TBSP vinegar in regular milk and let stand 5 minutes)
2 - large egg whites

1. Preheat oven to 400ºF.

2. Combine first 5 dry ingredients in a large bowl. Cut in butter with pastry blender or two knives until mixture resembles coarse meal. Stir in cheese and ham.

3. Combine buttermilk and egg whites and blend with wisk. Add to flour mixture, stirring just until moist.

4. Turn dough out onto lightly floured surface and knead lightly 4 or 5 times with floured hands.

5. Pat dough into an 8 inch circle on a baking sheet coated with cooking spray. Cut dough into 8 wedges, cutting into but not through the dough.

6. Bake at 400ºF for 20 minutes or until lightly browned.
