2 lb lean hamburger
1 pack of saltine crackers
1 med onion - chopped finely
2 eggs
salt and pepper to taste

Directions:

Mix all ingredients together. Roll them into small meatballs - about the size of a
tablespoon. Cook on the stove top in a dutch oven with 3/4 cup of cooking oil. Turn a couple times to keep them from getting too dark. Place cooked meatballs on a paper towel for draining. In the same oil you cooked the meatballs in, save the drippings and add enough flour to saturate the oil. Add 1 cup of water and continue to cook gravy. You may have to add a little more water. Add back in meatballs. Cook for another 30 minutes on medium low heat. Stir occasionally.

Mom is a fast, no measurements kind of cook. She is actually crazy fast in the kitchen. She can shred chicken and butter bread for grilled cheese like no one! And although it took until I was in college, I do believe she has grown into a wonderful cook! I do also believe that burning bread may be genetic!!!!
