2 c flour
2 packages saltine crackers - crumbled
6 eggs - whipped
2 tbls of cooking oil
2 tbls butter - melted
salt and pepper to taste

Directions:

Pre-heat oven to to 350° F. Turn your skillet up to medium high; add oil and butter. Soak the chicken in the egg mixture for about 1/2 hour. In a shallow dish, combine crackers, flour, salt and pepper. Roll the chicken in the flour mixture. Fry for approximately 8 minutes on each side. Set aside on paper towel. Chicken should be a golden brown. Place the chicken on a rack/pan so that the chicken will drain and cook on both sides. Bake for approximately 40 minutes. The drippings can be used to make gravy for your mashed potatoes.
