3 lbs roast or boneless chicken
2 green peppers
2 red onions
1 jalapeno
1 bunch cilantro
large flour taco shells
2 fajita seasoning packet
vegetable oil

Toppings:
diced tomatoes
shredded cheese
shredded lettuce
salsa
sour cream
guacamole

Directions:
Directions:
Cook and shred meat and add fajita seasoning mix. Slice green peppers, onions, jalapeno lengthwise pull leaves off cilantro and toss stems. Fill a frying pan half way with vegetable oil and get hot. Put meat, cheese, some green peppers, onions, jalapeno, cilantro in a shell, wrap and put seam side down in hot oil, brown on both sides, take out of oil and add desired toppings to the top. Makes between 6 and 8 chimichangas.
