2 cups cooked quinoa
2 large eggs
1 cup shredded carrot
2 stalks green onion, diced
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
1/2 cup grated Parmesan cheese
2 tbsp. all-purpose flour
1/2 tsp. seasoning salt
1/3 tsp. freshly ground pepper

Directions:
Directions:
Preheat oven to 350º F. Mix together all ingredients. Distribute mixture into a greased mini-muffin tins, filling each to the top. (NOTE: I just dropped by heaping tbsp. onto a parchment covered cookie sheet)

Bake 15-20 minutes.

The dipping sauce I used was Kraft's Light Honey Dijon salad dressing.
