2 (3 oz.) pkg. strawberry jello
2 cups boiling water
2 (10 oz.) pkg. frozen strawberries
1 (13.5 oz) can crushed pineapple
2 large, ripe bananas
1 tbsp. lemon juice
1 cup sour cream
1 tsp. sugar
1/4 tsp. ground ginger
Dash salt

Directions:

Dissolve gelatin in boiling water. Add berries. Stir in pineapple, bananas, and lemon juice. Pour into a 6 1/2 cup mold. Chill until firm. Top with sour cream dressing (sour cream, sugar, ginger, and salt). Chill. Note: I usually made this in a glass dish and did not bother to unmold it. I would spread the sour cream topping over firm gelatin before serving.

The phenomenon of Jello Salad was a part of growing up in the 1960s and 70s in Texas! Jello was one of the basic food groups. The big debate over any gathering, was 1) who is going to bring the jello salad? and 2) which jello salad should they make? This recipe became a popular jello salad in the Kempf house. Here is the recipe handwritten by Andrea in high school (circa 1975) where she got the recipe in home economics at Medina Valley High School.
