6 pieces whole grain bread
6 oz. grated Colby or cheddar cheese
1 lb. loose sausage
6 eggs
1 pt. half and half
salt (to taste, optional)

Directions:
Cook sausage, set aside to cool. Grease 9x13" pyrex pan or large flat-bottom casserole dish. Arrange pieces of bread covering bottom of dish, overlapping if needed. Cover bread with grated cheese (and additional chopped ingredients, if desired - see note). Crumble sausage and add on top of cheese. Beat eggs, half and half and salt (if desired) together and pour over other ingredients. Cover and set in refrigerator overnight. Bake uncovered in 350º oven 30 - 45 min. or until set/browned slightly on top.

This is a great recipe for holidays or when you have company because you assemble it the night before, and the cooking aroma in the morning brings everyone to the kitchen! Maple sausage is our favorite, though any variety is good. If desired, add chopped onion, green pepper, tomatoes with cheese, this will lengthen cooking time.
