In a pot caramelize a small chopped onion, 4 cloves garlic chopped, and a half teaspoon oregano. Add 2 cans of cannelloni beans and cook on low for approximately 5 minutes. Remove from heat and let stand

Wash 3 bunches of escarole, place in a pot of water, bring to a boil and simmer until soft. Do not drain water but simply remove escarole, add to beans mixture and mix. Then add the water from the escarole to the mixture to obtain the desired consistency. Add salt to taste.
