Use a Big Pot:

I use any beef except chuck as it is too greasy. Brisket is the best, knee bones if possible, otherwise they sell packages of soup bones in the meat department.

Fill the pot with water, add the meat and washed bones along with a little salt, bring to a boil.

At this point you will see scum come to the top, spoon off until gone.

Lower temperature and allow to cook slowly. In the meantime, peel and cut 4-5 carrots and 4-5 stalks of celery to bite size. Chop a large onion and a handful of chopped fresh parsley with the stems removed. Add to soup along with a small can of diced tomatoes, salt and pepper to taste.

Remove cooked meat, chop into pieces and return to soup.
