3/4 cup flour
1 tsp salt
1/4 tsp pepper
1 tsp paprika
1 lb chicken breast cut into chunks
1/2 cup shortening
1 onion chopped
1 garlic chopped
1 20oz can tomatoes (21/2 cups)
1 cup hot water
1 tsp salt
1 tsp curry powder
1/2 tsp parsley
1/2 tsp thyme
1/4 tsp pepper

Directions:

Mix first 4 ingredients in bag or shallow dish. Toss chicken to coat. Brown chicken on all sides in hot shortening in frying pan. Remove chicken and place in medium pot. Saute onion and garlic in same shortening, add to chicken. Add remaining ingredients to pot with chicken. Bring to a boil. Cover and simmer for 1 to 1 11/2 hours or until tender. Stir frequently to prevent sticking to the bottom of the pan. Add a little water if necessary. Serve over hot rice.
