Ingredients: 1 onion, chopped 8 oz. mushrooms, sliced 2 lbs. chicken, cubed 3 tbsp. olive oil 1/4 tsp. cayenne pepper 2 tsp. paprika 3/4 c. chicken broth salt & pepper sour cream
Thickening:
3-4 T. corn starch 1/4 -1/2 c.cold water
Dumplings (Spatzen)
1 egg, beaten 1/2 c. milk 1 tsp. salt 1 1/2 c. flour

Directions: |
Directions:Brown onions and mushrooms in olive oil. Brown chicken. Combine all ingredients and simmer. Combine 3-4 tbsp. corn starch with 1/4 -1/2 c. cold water. Add to the simmering chicken mixture. Stirring until thickened. Remove from heat. Add 4 tbsp. of sour cream. Serve over rice, noodles or spatzen (dumplings). |

Notes: Spatzen Dumplings
Boil water in a large pot.
Mix together egg, milk and salt. Stir in flour. Mix until well blended. Dough should be thick. Put dough on cutting board and with a knife, cut the dough off into the boiling water in small pieces. Cook 5 minutes. Dough with float when done. Drain and serve.
