Ingredients:  
3 packages lemon jell-o
3 cups boiling water
Pinch of ground ginger
1 cucumber peeled and thinly sliced
4 scallions chopped
2 carrots grated
¾ cup mayonnaise
2 T dill chopped
9 radishes thinly sliced
6 stalks chopped celery
2 T parsley chopped
½ t onion powder
Salt and pepper

Directions:
Directions:
Combine lemon Jell-O, boiling water and ginger.
Stir to dissolve.
Chill in the refrigerator.
When it begins to set, but is not stiff, remove from refrigerator.
Add the mayonnaise and beat well.
Add the remaining ingredients and mix well.
Pour into a greased 8-cup mold (two quart capacity).
Refrigerate till set.
