½ Spanish onion
1 English cucumber
2 small red, yellow or green peppers
Large can whole San Marzano tomatoes, break up with hands, use juice
3 large cloves garlic
1 cup or more of tomato juice or V8 juice (may need more, so get big can)
2 Tbs extra virgin olive oil
2 tsp of chili powder
1 Tbs salt
Pepper
3 Tbs balsamic vinegar

Directions:

Chop each vegetable separately in Cuisinart.
Chop 1 of the canned tomatoes, the garlic, tomato juice, oil and chili powder, till smooth. Add to vegetables and chill.
