Cookie:

1 cup shortening
1 cup brown sugar
2 cups rolled oats
2 cups sifted flour
2 tsp. baking powder
1 tsp. salt
1/2 cup milk

Filling:
1 + 1/2 cups cut up pitted dates
1/2 cup sugar
1/2 cup water
2 TBSP lemon juice

Directions:
Directions:
Preheat oven to 350º

Cream shortening and sugar. Add remaining cookie ingredients.
This will be a sticky dough. Chill well. Roll out to 1/8" thickness.
Cut into rounds and place on parchment lined pan.
Bake for 10 minutes until lightly golden brown.
Cool. When cooled, assemble the cookies with the filling.

For the filling:
Place ingredients in a large saucepan. Cook slowly for 5 minutes. Mixture will be thick. Cool.

When ready to assemble, place a spoonful of filling on the bottom of one cookie, and place another on the top of the filling to make a sandwich.
