1 lb. ground Chicken.
1 med. or 1/2 lg. Vidalia onion, diced
3 cloves garlic, finely minced or grated on a microplane
Extra Virgin Olive Oil or Canola Oil
1 pkg. (10 oz.) frozen spinach, thawed, squeeze out all water
3 oz. crumbled Feta cheese

In large non-stick frying pan over medium heat, add 2 tbsp. of olive oil and saute diced onion till soft (not brown). Add minced garlic and cook for an additional minute. Remove from heat and cool slightly. In a medium mixing bowl, combine cooked onion and garlic mixture with ground chicken, spinach, feta cheese, fresh ground pepper and a little bit of salt. Shape into six patties.
Add 2 tbsp. of olive oil to a large non-stick frying pan and over medium heat, cook burgers 10 minutes, flip and cook an additional 10 minutes.
