2/3 c sugar
1/2 tsp salt
1 tbsp cornstarch
2 1/2 tbsp flour
1/4 c moist, flaked coconut
3 c milk
3 egg yolks, slightly beaten
1 tbsp butter
1 1/2 tsp vanilla
Sweetened whipped cream or ice cream

Directions:
Directions:
Mix sugar, salt, cornstarch and flour in heavy saucepan. Gradually stir in milk, stirring constantly until mixture thickens and boils. Boil 1 minute. Remove from heat. Carefully add a little of the hot mixture to the egg yolks,stirring constantly. Then return egg yolk mixture to the saucepan. Boil 1 more minute, stirring constantly. Swirl in butter and vanilla, then add coconut before pouring into a baked pie shell. Chill for 2 hours and serve with whipped cream or ice cream.
