12 tiny white potatoes
¼ c. créme fraîche
1 oz. caviar
bunch of rosemary for garnish

Directions:
Directions:
1. Put potatoes in a large pot, add water to cover by about 2 inches, add generous pinch of salt and bring to a boil over high heat. Boil gently until potatoes are tender, 18 to 20 minutes. Drain and let cool slightly.

2. Cut open top of potato and slightly spread apart. Add scoop of créme fraîche and dollup of caviar on the top.

3. Garnish with sprig of rosemary.
