1/2 cup shortening (part butter)
3/4 cup sugar
1 egg
1 Tbsp milk
1/2 tsp lemon extract
3/4 tsp baking soda
1 3/4 cup flour
1/4 tsp salt
3/4 tsp cream of tartar
1/2 cup raisins

Directions:
Directions:
Preheat oven to 400 ºF

Mix thoroughly shortening, sugar and egg. Stir in milk and lemon extract. Sift together baking soda, flour, salt and cream of tartar. Combine to mixture. Stir in raisins.

Bake 8 to 10 minutes
