2 large chicken breasts
1 c chopped onion
1 clove minced garlic
2 Tbsp butter
1 can tomatoes, cut up
1 can tomato sauce
1/2 c chopped green chilies
1 tsp sugar
1 tsp ground cumin
1/2 tsp salt
1/2 tsp dried oregano, crushed
1/2 tsp dried basil, crushed
12 tortillas
1 1/2 c shredded Monterrey jack cheese
3/4 c sour cream

In saucepan, simmer chicken in water to cover 15 - 20 minutes (skin and bones). Sprinkle chicken with a little salt. Cut into 12 strips. In saucepan, cook onion and garlic in butter. Add tomatoes, tomato sauce, chilies, sugar and seasonings. Bring to boiling, reduce heat and simmer, covered for 20 minutes. Remove from heat. Dip tortillas in tomato mixture.Place 1 piece of chicken and about 2 Tbsp cheese on each tortilla, roll up, place seam side down in 13 x 9 baking dish. Blend sour cream into sauce, pour over tortillas. Sprinkle with remaining cheese. Cover and bake at 350º for about 40 minutes.
